Apple Crisp

One of my many favorite recipes to make in the fall is apple crisp. It is brings memories of trying to sneak a spoonful from my mom’s apple crisp while it was still cooling and covering up any evidence of the missing piece! Ha! It was the best. I took her recipe and made a healthier version without sugar or flour. Surprisingly it’s still delish and super easy.

This recipe serves 2-4 people.

INGREDIENTS

  • 2 apples of your choice – skinned and sliced
  • 1/2 to 1 cup of old fashioned oats
  • 1/8 cup of shredded coconut – unsweetened (optional)
  • 1/4 cup of chopped pecans or walnuts (optional)
  • 2 teaspoons of cinnamon – divided
  • 2 teaspoon of cloves – divided
  • 1/4 cup of butter or extra virgin coconut oil
  • 1 drops of Cinnamon Bark Vitality Oil
  • 1 drop of Nutmeg Vitality Oil
  • 1/4 cup of honey – divided

DIRECTIONS

Preheat oven to 350. Slice up the apples, toss with 1 tsp. cinnamon and 1 tsp. cloves pour into glass baking dish.  In a small bowl mix oats, 1 tsp. cinnamon and 1 tsp. cloves and coconut, pour on top of apple mixture. Sprinkle with chopped nuts. Take 1/4 butter or coconut oil, cut into small pieces and place on top. Drizzle with half of the honey. Bake for 15-20 minutes at 350 and then turn oven down to 250 and bake another 15-20 minutes or until apples are bubbly and juicy. During the baking process if the crisp looks to dry you may need to add a bit more butter or coconut oil to moisten it. Mix the rest of the honey with 1 drop each of the essential oils. After the crisp is done, drizzle with the remaining honey/essential oil mixture. Enjoy!
