Parmesean Basil Farmhouse Crackers

INGREDIENTS

  • 1 ½ cups of Einkorn flour
  • 1 ½ t cream of tartar
  • ¾ t salt
  • ¾ t baking soda
  • 3 T fresh grated Parmesan cheese
  • 1-2 T dried basil
  • ¼ cup of oil (I used olive oil)
  • ½ cup water
  • 1-2 drops of Basil Vitality Oil
  • 1 egg
  • 2 t sugar
  • 1 t balsamic vinegar

DIRECTIONS

Preheat oven to 350 degrees.
In a medium bowl, combine first six ingredients and mix well.
Add oil and stir until mixture resembles coarse meal.

Add water, basil essential oil and stir until a soft dough forms.

In a small bowl, whisk together egg, sugar, and vinegar. Set aside.

Turn dough onto a lightly floured surface and roll out very thin. Brush with egg mixture. Use cookie cutters to make any cracker shape you like. Transfer to baking sheet.

Bake for 20 minutes (depending on size and thickness of your crackers). Then broil them until lightly browned.

Store in an airtight container. If they pick up moisture and lose their crispness, just pop them into a 250 degree oven for a few minutes.

Be creative and make different variations of flavors. For example Sun-dried tomato basil, Rosemary or Garlic Dill. There are lots of possibilities.
