Chocolate Chip Pumpkin Bread
A healthy twist on an old favorite. We replaced sugar with raw honey, regular oil with coconut oil and regular flour with ancient grain Einkorn flour.
INGREDIENTS
- 3 cups Einkorn Flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon clove
- 1/3 cup raw honey
- 1/2 cup coconut oil
- 3 large eggs
- 1 cup pumpkin puree
- 1-2 drops of Cinnamon Bark Vitality Oil
- 1 -2 drops of Nutmeg Vitality Oil
- 1-2 drops of Clove Vitality Oil
DIRECTIONS
Preheat oven to 350
Combine flour, baking soda, salt, cinnamon and clove in a medium bowl.
In a large bowl, cream honey and coconut oil until smooth and fluffy. Add eggs, one at a time. Mix in pumpkin puree. Add essential oils. Bake for 40 minutes or till a toothpick comes out clean. If baking mini loaves cut baking time in half.
