Southwest Salad

Here’s a salad we love because it has a little extra punch in it. You can increase the spice depending on your preference. It’s quick and easy but super satisfying!

Southwest Salad

  • 1 head romaine lettuce, chopped
  • 1 can corn, sweet
  • 1 red bell pepper, chopped
  • 1 cup cherry or grape tomatoes, cut in half
  • 1 (15 oz.) can black beans, rinsed and drained
  • 1/2 cup grated pepper jack cheese

 

Mix all of the above together in a large bowl


Creamy Avocado Salsa Dressing

  • 1 small avocado
  • 1 small jalapeno, seeded, deveined and roughly chopped (optional)
  • 1 teaspoon minced garlic
  • 1/4 cup loosely packed cilantro
  • 1/4 cup sour cream or plain Greek yogurt
  • 1/4 cup smooth salsa (hot for more of a kick)
  • 2 tablespoons olive oil
  • juice from 1 lime
  • 1/4 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/8 teaspoon pepper
  • 2-4 drops lime essential oil
  • 2-4 drops of citrus fresh essential oil
  • 2-4 drops black pepper essential oil

 

Mix all the above together in a food processor and drizzle on top of salad. Garnish with extra cilantro. Enjoy!
