Southwest Salad
Here’s a salad we love because it has a little extra punch in it. You can increase the spice depending on your preference. It’s quick and easy but super satisfying!
Southwest Salad
- 1 head romaine lettuce, chopped
- 1 can corn, sweet
- 1 red bell pepper, chopped
- 1 cup cherry or grape tomatoes, cut in half
- 1 (15 oz.) can black beans, rinsed and drained
- 1/2 cup grated pepper jack cheese
Mix all of the above together in a large bowl
Creamy Avocado Salsa Dressing
- 1 small avocado
- 1 small jalapeno, seeded, deveined and roughly chopped (optional)
- 1 teaspoon minced garlic
- 1/4 cup loosely packed cilantro
- 1/4 cup sour cream or plain Greek yogurt
- 1/4 cup smooth salsa (hot for more of a kick)
- 2 tablespoons olive oil
- juice from 1 lime
- 1/4 teaspoon salt
- 1/4 teaspoon cumin
- 1/8 teaspoon pepper
- 2-4 drops lime essential oil
- 2-4 drops of citrus fresh essential oil
- 2-4 drops black pepper essential oil
Mix all the above together in a food processor and drizzle on top of salad. Garnish with extra cilantro. Enjoy!
