Yummy Skillet Cookie

 

Who doesn't love an oooey gooey chocolate chip cookie fresh from the oven. Now you have a healthier gluten free version. It is still easy to over indulge. Don't say you were not warned!:)

Ingredients

1 cup butter, or coconut oil, softened + 1 tsp for coating skillet
3 cups almond flour
½ tsp salt
1 tbs baking powder
1 cup coconut sugar
3 eggs
1 tsp real vanilla extract
2 drops cinnamon bark oil
2 drops nutmeg oil
2 cups chocolate chips

Directions

-Preheat oven to 350 and coat cast iron skillet with butter
-Mix dry ingredients together, set aside
-Cream butter + coconut sugar together
-Add eggs one at a time to creamed mixture
-Add vanilla, essential oils and blend
-Add flour to creamed mixture and stir until blended
-Add chocolate chips
-Scrape mixture into greased skillet
-Bake at 350 for 30-35 minutes, until center is soft but the cookie surface is beginning to crack.
-Remove from oven and let stand for 10 minutes.
